I will be installing an electric fuel pump and filter at the back of the car to feed my webers and was wondering what is the correct way to wire it up. This is a race car, and has the battery in the trunk, so power and good ground is close by.

I suppose a relay is best? Any reason this shouldn't be at the back at the battery? Then I can just run a fused trigger wire from the front mounted switch to the back to turn it on? I guess my main question is do I need to have a shut down switch wired in to the oil pressure system to shut it down in an emergency? I'd prefer to keep it as simple as I can.

Relay and fuse are a good idea, yes. Technically you should have it wired through an oil pressure switch so that it does not run if the engine is not running (car rolls over, for example). You need some kind of bypass or delay so it allows the pump to run when starting. Of course, this is not needed on a carb system, assuming the carb bowls are full, so consider that... I have no connection to oil pressure interlock on my Valiant and just use a switch. It's on my "should do that" list...

On my EFI cars, the ECU shuts off the pump after a few seconds of not receiving a tach signal, and the Valiant will be EFI'd soon hopefully.

You could trigger the relay with the starter or a separate momentary on switch (to prime system before starter)

Then operate the relay of oil pressure switch.

I would just keep it simple. At least for now. I raced my Fury (forever it seems) without a (fuel pump) oil pressure switch. I just put the fuel pump power switch in easy reach. Never had an issue, of course I never wrecked it either. The Belvedere is getting the same treatment. Fuel pump at the back, relay in the rear as well. Power feed from the 'running' side of the kill switch and the relay 'control' wire routed up front to the driver.

an easy way to tie power to an electric fuel pump to oil pressure is to use a mopar oil pressure switch that has three connectors on it, when
it is used as designed one of the connectors supplied power to the heated coil for the choke pull off. A 70's feature on cars with carburators…

Use that connector as the trigger on the replay that powers the pump, when cranking the motor as soon as some low oil pressure is reached,
IIRC it is about 5 lbs the connector sends power. This has never failed to start the 83D150 immediately. I have tested it, to simulate no oil pressure,
pulled the plug on the oil pressure sender and the motor shuts down.

I also wired in a switch to trigger the fuel pump relay manually, to fuel up the lines after the D150 has been setting for a week or so.
That is a fused wire to a dash toggle switch that connects to the same fuel pump trigger wire mentioned above.
I have a cover over that toggle switch so it cannot be activated incidentally.

I use an intertial fuel pump cutoff switch, e.g. https://tinyurl.com/y4bjr82a

I mounted in the trunk on the bracket for the trunk hinges. I put a toggle switch under the dash that turns the electric fuel pump off.

I just fill my carbie with about 50ml of fuel (if it has been sitting for a week or so) and pump the peddle twice. She fires up ok.
