I have a head I believe to be a 1973 casting that I had .100 shaved off about 10 years ago and then time and life got away from me. I'm fin all begunning my slant build. But the head I had milled is now rusty. How much more can I get milled to clean up the gasket surface ? The pistons are about .212 in the hole

You should be safe at least up to 0.120" total milling, probably more.
