I have a 61' Valiant with a later type Carter dual barrel carbie fitted to the slant 6.

The car is driven infrequently, about once a fortnight, and is hard to start as the fuel has drained/evaporated from the carbie. (If I pour a little fuel into the carbie it starts easily).

What can I do do prevent the evaporation from happening?

I put a facet style electric pump next to the tank so I can prime the system. You can keep it off after priming.

If you pour gasoline into an open container and leave for a fortnight, I expect very little of it will remain and remainder probably won't vaporize easily. With a working charcoal canister vapor recovery system, at least some of the vaporized fuel could be recovered but that won't help your starting issue.

You could set up an electric pump to run only on ignition start using relays (get them from Daniel Stern Lighting). I have list of suitable priming pumps here: Vapor Lock. If you add relays, that would be a good time to do the HEI Ignition Upgrade.

Do what the factory did- install a charcoal cannister and a closed air cleaner. This will help contain the petrol vapors a bit, but I don't think any device will retain the vapors for a fortnight (two weeks to us Yanks). Just about any carburetor will evaporate dry if left untouched for that long. The electric fuel pump priming is about the only way to get rid of that problem.
