Is it possible to use a serpentine belt ribbed pulley equipped alternator on a slant by swapping out the pulley to a v-belt pulley?

Yes, as long as the alternator is physically compatible with whatever bracket you're using and the pulley you select (a) takes the right width of V-belt, and (b) winds up aligned with the belt line of the other pulleys on the same belt.

must anything else be changed besides the pulley

No.

FYI- If anyone is shopping for JUST a V-belt pulley, the Mopar numbers for the v-belt pulley for a 1989 Diplomat are:

4094028 (2 groove, 90 amp), 4111768 (2 groove, 114 amp), 4106094 (single groove)
