I have been considering the same problem for an upcoming megasquirt conversion, and I am leaning towards a modified freeze plug in the middle position. I am thinking that this should give a good indication of the coolant temp.
It will work, but will read a lower temp, then a sender is the head. Some Chevy V-8's have a sensor in the side of the block, and I have seem about a 20-30 degree difference between the block and head sensors.
