I guess I was misleading about why hydrophilic characteristics are engineered into Dot 3 and 4 fluid. It is there as a safeguard to minimize damage to the system should moisture enter the system. Yes the system is sealed to prevent regular entry of water and saturation of the brake fluid, but if that seal is violated by something as simple as a crack in the rubber gasket or an overzealous car wash attendant spraying the engine compartment with water, Dot 5 fluid would leave you unprotected.
