When using 340 valve springs in a slant head do you have to do anything to the spring pockets

I never did.Don't know what cam you have, if it is big, check for coil bind and clearance between retainer and valve guide. If it is close to stock,(mine was around .425 lift) had no clearance issues.

you don't need to machine the head, you DO need new plates wich fit properly inside the 340 springs (MP 210429?? ) the stock slant six pring plates are a tad small.

yes the retainers. We call them plates and we call the valve locks "retainers", my bad, sorry.
