I did a compression test on my '68 engine last night after I puller her from storage. I tested the cranking compression and they are all between 120 and 134. Ya, a little low and spaced apart abit but all in all, this thing runs too good to rip apart. My queston is...

Is there any reason a head couldn't be grooved for wire instead of the block? I was going to have my head done soon and since the bottom end is good (at least untill I break something installing the turbo and EFI) I would like to leave it alone for now.

The block is a more stable "platform" so it is the surface of choice.
If you put o-ring grooves into the head, be sure to check combustion chamber alignment to the bores before doing the work, I have see major mis-alignment between the head chambers and the block's bores.
