I am installing new bearings in an 8 1/4 today... It looks to me that they(the bearings) are lubed by the gear oil that fills the entire housing, is that accurate?

If that is true, is it a necessity to pack the bearings with grease? or will the oil act as a salivant and wash the grease away anyway?

I don't know if the rear end oil makes it to the bearings or not.......

But if it does, I'd pack them in a light grease so they're lubed until the rear-end oil gets to the bearings.............. (I'd probably just use white lithium)

Yes the diff fluid lubes the axle bearings.
