I've decided to go the super six route rather than the 4 bbl. Besides the stock Holley or Carter can anyone suggest another 2 bbl carb option?

Well, sure...there are lots of different 2bbl carbs you can install directly or adapt to the slant-6. What are your goals that are incompatible with the stock Carter BBD or the aftermarket Holley 2280 (Holley 2bbls did not come stock on the slant-6)?

I'm sure the stock carbs would fit my "goals," which can be classified as cheap and easy performance upgrades. I was just curious as to other, perhaps better (in terms of performance) aftermarket options.

Well, yeah, there are options. There've been some conversions to the Motorcraft 2150, see here and here. Another option is any of the many Holley 2300s, see here.

You may even want to look at a non-Super-Six intake solution (modify a 1bbl intake), as described here .
