I acquired a rebuilt '79 model slant 6 motor recently...I'm thinking about swapping the slant 6 out in my '75 Scamp with this one, but I'm not sure what intake/exhuast I should use.

The block was bored .040 over and has all new internals. w/ documentation.

The motor has "Clifford" slant 6 performance parts on it.
Aluminum 4bbl intake w/ Holley 650
3-3 exhaust headers
Aluminum ribbed valve cover.

I was told the cam is a Comp Cams mild lift "RV" cam installed for torque... Listed as # JP102251380 on the paperwork.
I havent been able to find any specs with that model or number. Any help?

I also got a hold of a complete Super-Six setup.

What would be the best combination for the best overall performace/economy? Is the 4bbl asking too much?

Since the motor is out,check the specs on camshaft yourself.Do you have a degree wheel and dial indicator?

I'm going out on a limb here and say the 650 Holley is Way to much carb.
I personaly would either find a smaller 4b carb or do the SuperSix(perfered option) and see how it plays out.I'm running the Clifford pieces on mine with a 500 Eddy carb and a Comp RV cam(264H) and while not runnng fat it is a waste of 'extra' carb.I'll be converting to SuperSix this winter and saving the 4b setup for a future build that can use it.Mine are all running 833od trans and with afore mentioned setup best I've gotten is 17mpg combined,it's not a tire burner/neck snappin set up but it does PULLLLL real good.Good luck 8)

I'm running a 350 cfm Holley 2300 and it pulls like a freight train. I like it. Of course, your results may vary.

So would running split headers with the 2bbl be a wise option?

No problem there. 350 2bbl is probably your best bet.
