So I will be swaping a T5 into my '79 F-Body, and just need to know how to wire the Neutral safety switch to the T5,

I wouldn't bother............

Ground the wire, or make sure it's not grounded.... Whatever way lets you start the engine....

You could wire a micro switch to the clutch pedal, For a clutch safety. Bring the single wire from the start relay, to the switch and the other side of the switch to ground. The switch should be normally open.
PS: the wire from the relay at the transmission connector is the middle one.

well I have a pedal (single ) from a 1990 Nissan 300ZX, with the neutral safety switch attached, so I take the middle wire from the trans connector and connect it to one of the wires on the neutral safety switch, and just ground out the other correct ? What about reverse lights ?

Yup, that will work. Not all that familia with the 4 sp trans, but if I remember correctly, there is a switch on the rear of the trans main case. Just connect the two remaining wires from the auto trans connector (two outboard wires) to this switch.
See, it is not necessary to be a "rocket scientist".
