What is the purpose of a baffle? I have 2
spare carbs one cover has the slot
for it and the other doesn't.John

You mean inside the bowl? Just to control fuel sloshing from side to side, and messing with your float as far as I know.

The baffle is to prevent the fuel level from changing if the car made a hard stop or turned the corner too hard because of the single pivot float.
The later Holley 1945 had dual floats like the Carter BBD to make sure that was no longer a factor (but quality control in the 70's caused other issues with the carbs...), on the HP 2 and 4 barrel carbs Holley went from a single side pivot to a center hung float in the fuel bowl, but still had to install jet extensions, plastic "whistles" and baffles in carbs being run off-road and in racing.

If the fuel sloshes around in the bowl it can have some interesting effects, that can prevent proper metering of the fuel.

Float level changes allowing more fuel into the bowl and changing the condition to be really rich or slightly flooded.
If to far the other way it could uncover the jet and cause a lean out (you'd need a 4x4 to do that though).

If the float gets stuck open (i.e. sunk) and the bowl does not have an external vent, the excess will run out the pitot tube at the top of the carb throat and flood out the engine.

If you are rebuilding one, check the main jets, they have a number stamped on them, and if they are under 56 they are too lean for your bigger vehicle. I'd bump them up a notch to help with power if they are under. They use the same jets as the normal aftermarket 2 and 4 barrel holley's.
