Ok it appears stock is 195. Any reason to change that? Recommended brand?

It depends what your doing with the truck, long hard hauls up steep grades verses short hops and local driving and what time of the year. 195 in the winter, 180 in the summer, 160 if your constantly hauling heavy loads with a 40 year old block full of rust.
Stant super stat is a favorite for the summer and recommended by Slant Six Dan, I like the Robert Shaw soup can style in winter.

What thermostat would you recommend for endurance racing? I'll be doing a LeMons race in Sebring, FL in the dead of summer, and I want to make sure the temps stay reasonable.

I recommend a stant superstat at the factory temp rating. Along with a cooling system in good condition. A heavy duty radiatot with a five blade fan and a fan shroud would also help.

I use MotorRad in my rigs now, so far so good, and they have regular and highflow/race style versions available. I switched after I had a Stant Superstat fail to open on a summer highway trip 5 years back, my chevy buddy has had a few fail on him as well in the last few years, so he switched.

Just keep a spare in the tool box and a tube of RTV just in case.
