I have my engine out for a cleanup and reseal. It is a 71 225. I have a 74 225 in the shed. Should I swap the 74 head onto my 71 engine to gain the hardened seats?

No,,,,you should swap on the 74 head because its in better shape.

Hardened seats are not necessary with modern fuel.
