When you launch hard, the oil sloshes in the pan and the pickup tube can't pick up oil. If you have hydraulic lifters, that's probably what you heard.

Usually this is not a problem with a street car if your oil level is full. High perfomance engines use baffles in the pan to prevent oil sloshing.

Change the oil and filter. GOOD filter, see oil filter study. Maybe nothing, probably something. What's the history? What hind of ET's are we talking about?

The windage tray won't help the oil pickup problem. The next most likely "noise maker" when oil pressure drops is usually rod bearings.

You'll know when it's about to blow. It will start running real good.
