What is the purpose of a fusible link and how does it work?

I had a new wiring loom made for my 61 Valiant and I now have a fusible link that is connected to the starter motor.

Works just like a fuse, but it's harder to replace........

That's why when I rewired my D100 I replaced them all with real fuses. I know their purpose is more of a slow blow than a fuse that blows quickly, but I think they're nothing more than a PITA so I got rid of them.
