Filled up my 76 Aspen yesterday and both gauges worked. Today I went for a ride and neither worked. Checked fuses and all seemed good, any ideas.

Time to check the sensors and wiring, temp sensor at front of head near T-stat housing wire goes from there down the pass side of valve cover and over to the fender then off to the firewall, Fuel Level can have the ground strap rust off between the tank nipple and the main gas line at the body, it also has a nice wire that goes through a plug in the trunk pan, up behind the back seay and drivers side wheel well, then down the driver's side door rail under the carpet to the kick panel and dash.... you also could have an issue with the circuit board on the instrument cluster (the brass/copper paths do corrode and decay with moisture and lack of use), and the gauges could give up the ghost if they got a spike in voltage...

Now would be a good time to invest in the 1976 Mopar Field Service Manual and Electrical Manual (some versions in 1976 had both combined in to one book), they have the full wiring diagrams, wire color and gauge and connectors, so you can trace the circuit out. Luckily 1976 isn't a favorite year, so you can get the manuals on Ebay pretty Cheap.

I'm not familiar with the Aspen wiring, but could both gauges going out at the same time indicate an issue with the instrument voltage regulator, as on earlier cars?

Yes, this is the classic symptom of a dead ICVR. Get this one.

If the ICVR failed one way (points stuck closed and sent 12v to gauges) then they would have both pegged, cooked, and died. If it failed the other way (open circuit) or if it's some related problem (faulty circuit board or similar) then they should be fine.
