DI has it covered, there is not any real difference with those heads.
Overall you have a pretty good plan, sounds like a fun winter's project.
Try to get any machine work done soon befor the spring time rush hits.
Let me know when you need some exhaust manifolds.

So how much would be good to take off of the head? The only thing i have to buy is valves etc... my buddy has a machine shop and i help him build and restore his race cars so he does my welding and machining for me.

You are lucky to have a buddy like that. Trade time and all you can. then imagine the head to a higher state of evolution, Gasget match, learn to grind with rotary tools they are cheap up here from Boeing Surplus and talk to your machine bud about the combination of ford and chevy valves . don't mill the head untill you think about pistons and stroking posibilitys, but work on head flow first, cause the stock head really sucks!and right now modifying it is the most important thing to make the slant catch up to (and surpass) the other inliners. Don's machine in Gresham Oregon have done two heads for me The first used EGGE valves As in The slant sickness artical. And the next with so they could save me some money a combination of sb chevy and sb ford valves. This engine when I get it built will retain the integrity of an un milled head and block but use strokeing and or boost to get the actual compression ratio that works with PUMP gas.The head with my porting and oversized EGGE valves that I'm using now iS awsome compared to the gasget matched head I've been driving for ten years It's milled .100 with nothing off the block, but always do the math when screwing with compression ratio. I'm best desribed as a student of this foram the lions share of what I know about internal combustion I owe to this foram I want to thank all the Bretherin for makeing this foram a place to make good machanics better and free thinkers envolved :D Bruce Johnson
