Sounds pretty good so far, what you need to do is put an intake manifold onto the mock-up and set a level on the carb flange. Try to get the carb mounting somewhat level when the front suspension is "loaded". (you may need to put some extra weight up front to simulate the complete engine assembly weight.
As for the front to back tilt, the u-joint will handle a good amount of the angle and other adjustments can be made to get that minimized.
