Where do the copper washers go on the brake lines to the disk brake caliper? One on either side of the hose connection? Or both on one side?

They are gaskets. If you are speaking about the "banjo" hose connection, then they go on both sides. You need 2 for each caliper end connection.

FYI, a cheap-a$$ friend of mine tried to make washers out of copper pennies on a lathe and they did not seal - alloy was too hard.

I had quite a collection of brake caliper hose washers since they came with both my rebuilt calipers and the new hoses. Do this with a few cars and one ends up with a lot of washers.

You can buy sets of copper washers from Harbor Freight fairly cheaply. In a pinch I've carefully sanded the old washers very smooth and them reused them w/o problems.
