The Holley 5200 is the same mounting pattern as the Weber DGV/DFV.

That's not correct. Feedback carburetors aren't smart enough to default to any particular position when the wire's disconnected.
Depends on the carb. Some of them will default to full rich or full lean. I'm not entirely sure which one the Mopar ones default to, and it doesn't really seem worth finding out to me.
