i recently installed my clifford headers/offy intake with the 2 barrel adapter with a 350 cfm demon carb. it idles at 1000 rpm but stalls anything after 4000k rpms. i switched out the power valve and carb jets but i'm still having the same problem. i have a hot spark with the mopar orange box.
any help would be appreciated. i need to drive my truck :(

I’m confused, is the carburetor flooding, puking gas out when not running, or the engine running too rich making black smoke out the exhaust pipe?

Do you have a stock cam shaft? If so, idle in park, or N, should be around 750 rpm. Where you said it idles at 1000 rpm, I’m thinking you may have a vacuum leak some where between the base of the carburetor to the mating of the intake at the head.

While the engine is running, spray some carburetor cleaner on all gasketed connections, check for unconnected or cracked vacuum lines, power brake booster lines & any uncapped vacuum taps on your carburetor. A leak will be detected while spraying when the engine’s rpm drops.

How did you change the jets & power valve, richer or leaner, and do you remember how the carburetor was set before messing with it?
