I've read I can install a dual field alternator where a single field one was by simply grounding one of the field wires.

Does it matter which field wire I ground?

Yes, and no it doesn't matter which side is grounded.

I grounded one of my field terminals to the alternator body,is this where it should be grounded?

I grounded mine to the block, it is a good ground connected to battery. I don’t trust the electrical competence of the bracket holding the alternator.

You better, as that is the ground path for the alternator power.
