I currently run the Mopar electronic ignition but I have all of the parts for HEI...except the engine wiring harness because mine is SHOT. I was planning to order a new one from Evan's Wiring but I wasn't sure which one I should order.
Would the easiest way to go be buying the points wiring harness and modifying it for HEI?
Other suggestions for when ordering? Ask him to do any changes?

Call and talk over your plan with Mr. Evens. I’m sure he can make up a custom harness that will be just what you need.
