What would you do as far as head work for a daily driver without severely cutting gas mileage and driveability?

for background, this will be a rebuilt motor. Bored .060
Super six
Single 2 1/4" exhaust
Electronic ignition

Haven't milled block or head

Would you port/polish, use larger valves, different springs? Should I consider increasing compression by milling the block or head?

For what you are going to do, I would mill the head to acheive about 9:1 compression, stock valves on a daily driver is fine (especially with using a BBD and stock cam). Make sure that the engine block deck is "flat" otherwise the head won't seal right after it's planed (a machine straight edge and feeler gauge will tell you). I would go through and "clean up the ports" (i.e. take care of any casting scabs, rough spots, 'bumps' protruding into the port), and do a little blending where you feel a sharp change in contour in the bowl area and valve guide ridge, leave the "floor" of the port alone.

Later you can build up an engine that will be all performance once you have done this light bit of practice work and save more money for the "fun build".

Getting the compression up and installing larger valves with valve-bowl (pocket porting) work will add quite a lot of performance. You won't need different valve springs unless you change the cam or yours are quite old. New stock valve springs would be fine.
