I have a 1966 Dodge D100 pickup with a 225 slant 6 engine and a 4 speed manual transmission.

This truck has not been run for 26 years, I have named it frozen, as can be expected everything is froze up.

I have the engine turning over and will pull for rebuild. Question 1, am I on a good site for information and advise regarding this project? Question 2, I want to use this as a daily driver on my Farm in SD, so I'm interested in fuel economy and how to achieve it.

I'm sort of a jack of lots of trades and master of few, and have common sense, but believe in listening to all advise no matter how simple it might be.

With the above in mind What should I tell the rebuilder I want, or should I just trust them?? ( Born at night but not last night) thanks for your input, Metal Turkey.

This is a great place to be for this engine; lots of practical experience at all levels for this engine, from stock to all out racing. I just finished a stock level rebuild. I used a torque cam from one of the leaders here ('Doctor Dodge', aka Doug Dutra) that might be a good improvement for your intended use on and around the farm. Just breaking it in now!

The engine in stock form ought to be pretty good for your use. Mileage is not going to be great with anything with low speed farm driving, might be a bit better if you have one of the smaller displacement 170 ci /6's. Keeping the old 1 BBL carb will help and will have quite enough flow for farm use; plenty of rebuild parts for those.
