Less weight on the front , ease of access to engine, suspension etc. More design freedom to mount / locate components etc.

That's a lot of structure to remove. It's not just along for the ride. Unless you plan on running a roll cage with tubes extended to the subframe in front of the suspension mounting points I would keep them. They also keep the engine compartment much cleaner.

Yep, on "unibody" cars they're structural components. When removed, they need to be replaced with something performing the equivalent work.

Hell, even the bolt-on fenders add a small structural function to this style engineering.
