To me, it sounds like you have a vacuum leak. Are all your hoses and everything connected in the right places?

Is your new intake bolted up properly to the head?

Your old carburator was probably gushing out fuel because your needle was stuck, I've had this happen to me. Your fuel pump, if it is stock, does not put out a lot of PSI.

Your PCV valve should rattle around when you shake it. If it is not working properly, it might be the source of your vacuum leak, and may cause your car to idle improperly.

Does your idle slow down when you put your finger over the hose that goes to the PCV? If it slows down a lot, it probably means that your PCV valve needs replacing.

You can try and clean your PCV valve with carburator cleaner. But it's probably just as easy to buy a new one.
