How much vacuum should I see at idle?
I have right at 7 inches and at choke it is about 20.

Depends upon the rpm, in gear verses out of gear, one barrel or two.

I run about 16.5" in gear at 550 rpm on a 85 degree day.
18" out of gear with a Holley 1920.

With a carter 2bbl on a super six manifold and a stock cam I see 15"~16" at an 650 rpm idle in neutral. I have my dash gauge hooked in to a T fitting in the pcv hose. My second dash gauge is hooked in to a T fitting in to the vacuum advance at the distributor, I see as much as 20" inches at cruise.
