If you have the large bolt pattern 4 1/2 inch, there are several different styles available in the aftermarket. If I remember correctly some of the late model mustang wheels will fit.

I am running a set of 17x8" Mustang Bullitt rims on my 77 Aspen. it has the larger 4.5" bolt pattern. I did run into issues with the center bore of the wheel being too small. I corrected this (and the offset issue) by running a set of aluminum hubcentric spacers. I've also heard of somone boring out the center bore on the wheel slightly with a barrel sander to acheive the same effect, but the offset of the wheels ended up being slightly off.

What about running a wheel adaptor from 5x4 to a 5x4.5 bolt pattern? Seems like the cheapest rout. What type of offset would you need to run if the adaptor was 1" thick?

17x8 or 17x9 Mustang rims fit. You need a spacer in the rear but the fronts should go right on with minor lathe work on the rotors. Or, use one of my 13 inch brake kits that are designed for the Mustang rims like this guy did.
