How do you tell if you have the early head that needs the spark plug washer vs the 63+ head that doesn't use the crush washer.

See if you can find a casting date on the head -- probably under the valve cover.

Looks like a 72-73 head with number 3614850-1.
I just thought maybe a noticeable difference outside the valve train. Didn't really want to pull the cover.

Well, keen, a '72-'73 head is nicer than a '62 or '63 head.

AFAIK, there's no external (outside the valve cover) clue to discern a '62 from a '63 head.

What makes the 72 head better than the 60 head? Does it have better chamber shape or something?

Yep, better combustion chamber shape starting in '67 for more complete combustion.
