What is a good pick for a 10" drum conversion?
Will a MC made for 9" front drums work, or should I only look for ones made for 10" brakes?

It's a 63 Signet /6 with 10" front drums (from a 66 Dart) and 9" rear drums

I'm looking only for the iron type.

Any drum-brake master cylinder will work fine. For best results, it should contain a residual pressure valve at both outlets (this can get difficult...they stopped using them for '73 when they redesigned the wheel cylinder seals.)

Are you trying for a dual-pot master cylinder or a single-pot type?

Dual pot.

I am getting a new one from NAPA.
I can get this one today 4736338 (for 72 Dart with 9" drums)
or get 4736308 tomorrow (72 with 10" drums)

The 9" one has 15/16 bore

If the mbc for 10" brakes has 1 1/16 bore and the 9" unit has 15/16 bore, or vice versa, would the 15/16 bore be preferable for drum brakes?

Either. Do you want a harder-to-press brake pedal that doesn't travel as far (the 1-1/32" one), or an easier-to-press pedal that travels farther (the 15/16" one)?

I'm not sure what I'd prefer. I'll think about it.
I read somewhere that people like 15/16" for the more common disc brake conversion.
